Ingredients:
  • 500g (1 lb) pork belly, cut into 1-2 inch cubes
  • 4-6 large eggs (depending on your preference)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 1 tablespoon sugar (preferably rock sugar or brown sugar)
  • 3-4 slices of ginger
  • 2-3 cloves garlic, smashed
  • 2-3 star anise
  • 1 cinnamon stick (optional)
  • 2-3 dried chilies (optional, for heat)
  • 1 ½ cups water or enough to cover the pork
  • Salt, to taste
  • 1-2 teaspoons cornstarch (optional, for thickening sauce)
